Apples and Kale Salad

A delightful and sweet salad with ingredients that are unfortunately not combined often enough.

Ingredients

Salad
1 head of kale
1 med apple
2-3 cups red cabbage
1/2-1 cup red onion
1/2 cup pumpkin seeds

Dressing
Olive oil
Red wine vinegar
Lemon juice
Sea salt
Black pepper
Dijon mustard

Instructions

  1. With a mandoline, thinly shave apple, red cabbage, and red onion.
  2. In a large bowl, combine all ingredients except apple and pumpkin seeds.
  3. Massage vigorously for approximately 5-10 minutes – taste throughout massaging and adjust dressing ingredients accordingly.
  4. Once kale has wilted, toss in shaved apple and pumpkin seeds.
