Cabbage n’ Pear Salad with Walnut Crumble and Creamy French Dressing

Description

This salad has a delightful crunch and kick from fresh purple cabbage and onion paired with sweet succulent pears, and crisp juicy celery. The dressing is easy to put together and doesn't even require a blender, just a jar for shake-shaking! It is a deliciously rich and tangy blend of extra virgin olive oil, apple cider vinegar, spices such as lemon pepper, mustard and tarragon, and a bit of date paste to sweeten. Top this recipe with a mixture of crumbled walnuts, nutritional yeast, onion powder and salt and pepper for an added cheesy flavor and additional B vitamins and omega fats.

Ingredients

For the Salad:

1 medium sized Purple Cabbage - thinly sliced/shredded, not chopped

½ medium sized Onion – very thinly sliced, not chopped

4 or five stalks of Celery – cut very thin on the bias

1 or 2 ripe Pears – thinly sliced

½ c Walnuts chopped very well, into a crumble

1 tbsp nutritional yeast

1 tsp onion powder

Dash of S&P

Creamy French Dressing: (makes 3/4 cup of dressing)

½ c Extra Virgin Olive Oil

1/3 c apple Cider Vinegar

2 pinches dried Tarragon

2 pinches dry Mustard powder

2 tsp Onion powder

½ tsp Paprika

Sea salt to taste

2 pinches Lemon pepper

2 tsp Medjool date paste – or a dash of sweetener of your choice

1 tbsp Nutritional yeast

 

Methods/steps

For the Salad:

1) In a large bowl combine your cabbage, onion, celery and pears.

2) In another small bowl combine the following your chopped walnuts, nutritional yeast, onion powder and salt and pepper. Add this mixture to each individual salad as they are prepared.

Creamy French Dressing:

1) Combine your ingredients in either a mixing bowl or glass jar with a lid and proceed to mix-mix/shake-shake until thoroughly combined.
