Persian Mushroom Salad
Description
A delicious blend of soft and tender marinated mushrooms and finely diced onion with a creamy yogurt style dressing. Sarahfae proclaims that this is one of her all time favorite recipes! Traditionally this Persian salad (also known as Borani Garch) combines vegetables sauteed with butter, but here Sarahfae utilizes her marinating, softening, and warming technique to give the mushrooms and onions a texture, feel, and taste similar to in the traditional recipe. Eat this salad in romaine leaves, in a chard wrap, on seed crackers, or simply with fresh slices of cucumber.
Ingredients
Part 1: Tender Seasoned Mushrooms
3/4 lb of Crimini Mushrooms coarsely chopped = 3 cups packed
1/4 c minced Shallot or White Onion
2 Tbsp Grape seed Oil
1 Tbsp Water
1 tsp Lemon Juice
1/2 tsp unpasteurized Mellow White Miso //or// Nutritional yeast flakes
Salt to taste
Mediterranean Yogurt Dressing:
1/2 c AtV Sour Cream*
2 Tbsp plus 1 tsp Extra Virgin Olive Oil
1 Tbsp Lemon Juice
1 tsp minced Garlic
1 tsp minced fresh Mint
1 tsp minced fresh Cilantro (optional)
Salt to Taste
*AtV Sour Cream:
1 and 3/4 cups dry Cashews soaked overnight (roughly 6 to 8 hours)
2 Tbsp plus 1 tsp Unfiltered Apple Cider Vinegar
1/2 tsp Salt
1 and 1/4 cup Water Total
Methods/steps
Part 1: Tender Seasoned Mushrooms
1) Set your Mushrooms aside in a bowl
2) Set your Shallots aside in a bowl
3) In a small mixing bowl combine grape seed oil, water, lemon juice, miso and salt and whisk together for 2-3 minutes
4) Add the Shallot or Onion to your Oil mixture
5) Mix your oil/shallots into your mushrooms...
Tenderizing your Mushrooms:
1) Evenly spread your Mushrooms out on to either a parchment lined baking sheet or dehydrator tray
2) Let your Mushrooms warm/dry for 1 hour at 118 degrees F.
3) When you've finished tenderizing your Mushrooms set them aside and move on to the final step below.
Mediterranean Yogurt Dressing:
1) Whisk/mix together all of the above for a few minutes until your oil and lemon juice have married together with the *Sour Cream.
2) Place this dip in your fridge and let it chill for and hour or so, this way the flavors can build and intensify.
Finishing Touches:
Fold dressing into mushrooms and enjoy!
