Raw Cauliflower Cous Cous
Description
Enjoy this version of gluten free cous cous with the base being cauliflower. High in vitamin C and manganese, the antioxidant power in cauliflower is impressive. In addition to lowering oxidative stress on the body, the antioxidants present in the vegetable support the body's natural detoxification process.
Ingredients
1/2 head cauliflower, chopped
2 or 3 small carrots, peeled and sliced (about 3/4 cup)
1 clove garlic
1 tsp turmeric powder
1/4 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp sea salt
3 tbsp raisins
1/4 cup mint leaves, chopped
1/4 cup parsley, chopped
1 1/2 tbsp light miso
1 1/2 tbsp tahini
3 tbsp lemon
drizzle of olive oil
1/4 cup cherry tomatoes, halved
